Simple Korean Bulgogi Style Sauce – or – How To Use an Overripe Pear
Liquefy in a blender:
- 3/4 cup soy sauce
- 1/4 cup brown sugar
- 1-2 overripe pears (that’ll equal about 1 cup once it’s liquefied – don’t worry too much about getting it perfect)
- plus enough water to make it juice-like (the consistency of pear juice)
Heat over medium heat until it starts to boil. Allow to cool a bit then add:
- 5 cloves garlic grated on a microplane (pro tip: slit the garlic and peel it but keep the little roots on it and hold them while you microplane the rest of the bulb)
- 1 inch piece of fresh ginger grated on a microplane (you do not have to peel it before microplaning – the peel will stay mostly attached to the nub of ginger while the meat of the ginger will get ground up)
- 1 Tablespoon sesame oil
- 2 green onions finely minced (save some of the green part for topping)
Serve over steamed, sautéed tofu placed over rice. Which can be served atop a bed of shredded (angel-hair) cabbage, kale, or lettuce).
Zest, then squeeze some lemon over it all for a delicious finish.
Top with a bit of sliced green onion (the green part)
