1.5 Tablespoons unsalted butter, melted, plus bits butter for greasing muffin tins 1.5 cups flour
3/4 teaspoon kosher salt
3 extra-large eggs (or 4 large ones)
1 1/2 cups milk

Put butter in each cell of a 12 muffin tin. About two peas worth. Mix all the rest of the ingredients with an electric mixer or in a blender. Heat the oven to 425° And place the muffin tin in it until the butter just barely starts to turn brown. Fill each cell up with batter and put it back in for 20 to 25 minutes. When they’re done open the door and turn the oven off and let it cool down so they don’t immediately flatten like a soufflé when you take them out.
